To make the pastry, pour the sifted flour into a bowl with the salt and butter slice/cut into pieces, then rub in the butter with your fingers, gradually add water and from into a ball. Leave to stand for at least 30 minutes. Roll out the pastry in the baking case. Peel the apples and slice/cut them. Rub with lemon juice to stop discolouring. Arrange the slices of apples in the pastry base and decorate with greated zest of orange and 3 tablespoons of sugar. Sprinkle with crushed hazelnuts and almonds. Bake at 225C for 30 minutes. Serve warm or cold with a little fresh cream.
