HOW TO MAKE A SPANISH OMELETTE

You need 400g of potatoes, 1 large onion, 5 eggs, 100ml of vegetable oil, 4 tablespoons of olive oil, salt and pepper.
1) First slice the potatoes and chop the onion.
2) Heat the vegetable oil in a frying pan. Add the potatoes and onions and fry them for about 15 minutes. Remove the mixture from the pan.
3) Whisk the eggs in a bowl with salt and pepper, add the potato and onion mixture and mix well.
4) Heat the olive oil in a smaller frying pan and pour in the mixture. Cook over a medium heat for about 5 minutes. Then turn the omelette and cook it on the other side as well.
5) Serve hot or at room temperature with a green salad.
