1 Basic Cabbage Soup

Heat a tablespoon of olive oil in a thick based pan and add the onions and garlic, cook until soft, add the chopped cabbage and stir thoroughly and add onion soup mix, add the cans of tomato and stock, bring to the boil and simmer gently until cooked. Check for seasoning.
2. Spicy Cabbage SoupIngredients:
1 can beef broth3/4 medium head cabbage, chopped2 white onions, chopped1 green pepper, chopped1 mild pepperoncini, finely chopped1/2 cup chopped celery4 cups waterl large can tomatoes, chopped, with juice1 clove garlic, chopped2 dashes hot saucePreparation:
In a pan heat some olive oil and cook the chopped onion, garlic, chopped peppers and celery until soft. Add the water and beef broth, bring mixture to boil over medium-high heat; turn down to low. Cook gently until ingredients are tender, about 1 1/2 hours. Add chopped tomatoes and juice. Add more water if needed.
3. Original Cabbage SoupServes 4 to 6
Ingredients:
1 head cabbage, finely chopped6 medium onions, chopped6 green onions, chopped,6 carrots, peeled and chopped2 red peppers, diced2 cloves of garlic, crushed3 large tomatoes, skinned and chopped5 stalks celery, sliced4 oz brown ricesalt and freshly-ground black pepperolive oilPreparation:
Heat olive oil in a pan and add the vegetables, cook gently for a few minutes and then add enough cold water to cover. Bring the water to boil. Lower heat and then simmer uncovered for ten minutes. Add the rice, cover, and then simmer on low heat until the vegetables and rice are soft. This should take about 15 minutes. Season to taste.
4. Cabbage Soup with ZucchiniIngredients:
1/2 medium head of cabbage, diced3 small zucchini,peeled and diced1 large clove garlic, crushed1/4 tsp dried basil1/2 tsp black peppersalt to taste1 can chopped tomatoes2 tbsp tomato paste3 onions, chopped1 can chicken stock1 to 2 cups chopped spinach1/2 cup finely sliced carrotsdash of Worcestershire sauceOlive OilPreparation:
Heat the oil in a pan and add all the vegetables, stir thoroughly, add the tomatoes, tomato paste, stock and Worcester sauce. Cover and cook on low for 10 – 15 minutes.
